Veggies Beef Soup

INGREDIENTS
1/4 cup olive oil
1 1/2 cups chopped potatoes
2 cups chopped onions
1 1/2 cups sliced carrots
1 tbsp garlic; crushed
1 tbsp ginger
4 cups beef broth
4 cups water
1 can of diced tomatoes
2 cups of cooked/uncooked beef or chuck steak; cubed
2 cups of chopped kale
1 cup green peas
1 tsp paprika
1 tsp salt
1 tsp herbs(your choice)
1/4 black pepper
INSTRUCTIONS
Heat oil in a stock pot until shimmering.
Add onion, carrots, ginger, and garlic.
Cook over medium heat for about 10 minutes, stirring occasionally. If you're using uncooked beef, you can add it at this stage.
Add broth, water, and tomatoes. Bring to simmer and cook 20 minutes.
Stir in beef, kale, peas, and herbs. Simmer for 10 minutes. Adjust seasonings.
Serve and enjoy.
